~ INGREDIENTS:
- 12 Lasagna Sheets
- 2 tbsp Olive Oil
- 5 Cloves of Garlic (minced)
- 1 Onion (finely chopped)
- 1 Red & Yellow Bell Pepper (chopped)
- 1 Capsicum (chopped)
- 1 Zucchini ( chopped)
- 1 Cup Tomato Puree
- ½ Cup Boiled Sweet Corn
- 1 Cup Boiled Broccoli Florets
- 200g Mushrooms (chopped)
- ½ Cup Cherry Tomatoes (halved)
- 1 Cup Grated Cheese (Processed/Mozzarella)
- 1 Cup White Sauce
- Green & Black Olives (optional)
- Salt & Black Pepper to taste
- Chilli Flakes & Oregano
- Dried Basil & Thyme
~ METHOD:
1. PREPARE THE VEGGIES

Chop all the vegetables as mentioned( onion,bell peppers, capsicum, mushrooms, zucchini and sweet corn ) It’s up to you which veggies to use, but the more, the healthier and tastier your lasagna will be!
2. COOK THE MARINARA SAUCE

Take a pan, switch on the flame, and let the pan heat. Add 2 tablespoons of olive oil and let it warm. Add the chopped garlic and onion, and sauté until half-cooked.
Add tomato puree, cherry tomatoes, and boiled broccoli. Mix everything well and let the sauce simmer for 5 minutes. Add seasoning—salt to taste, chilli flakes, oregano, black pepper, basil, and thyme for extra flavor.
3. PREPARE WHITE SAUCE (BECHAMEL)

Take a saucepan, drizzle some olive oil then add the minced garlic. Afterwards add 2 tablespoons of all-purpose flour and let it cook. Then add 2 cups of milk slowly-slowly and whisk it continuously so there\’s no lumps left. Add some cream and grate the cheese now. Lastly end it by adding the above-mentioned seasonings as per your taste.
4. LAYER IT UP

Boil the lasagna sheets as per the package instructions and set them aside.
Take a baking dish, spread a layer of marinara sauce, then place a layer of lasagna sheets. Add a layer of white sauce, followed by a layer of the sautéed veggies. Sprinkle grated cheese on top. Repeat the layers until all ingredients are used.
Top the final layer with grated cheese, and olives.
5. BAKE & ENJOY!

Preheat the oven to 180°C and bake the lasagna for 25-30 minutes or until the top turns golden brown and bubbly.
Take it out, let it cool slightly, garnish with fresh basil, and serve hot!
