Make crispy veg cutlets at home with mixed vegetables, breadcrumbs, and spices. This easy Indian snack is perfect for tea-time, kids’ lunchboxes, or party starters. Shallow fried, crunchy, and packed with flavor!
~ INGREDIENTS:
- 2 tbsp Olive Oil
- 3 Cloves of Garlic (minced)
- 1 Small Onion (finely chopped)
- 1 Small Carrot (diced)
- ½ Cup Green Peas (boiled & mashed)
- ½ Cup Boiled Corn (crushed slightly)
- 2 Medium-Sized Potatoes (boiled & mashed)
- ½ Cup Bread Crumbs
- 2 tbsp all purpose flour
- 2 tbsp chopped fresh coriander
- 1 tsp Chilli Flakes
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp turmeric powder
- ½ tsp garam masala
- Salt to Taste
- Oil for Frying
~ METHOD:
1. PREPARE THE VEGGIES

Finely chop the onion, grate the carrot, and slightly mash the boiled peas and corn.
2. SAUTÉ & MIX

Take a pan, switch on the flame, and add 2 tablespoons of olive oil. Let it heat.
Add the minced garlic and chopped onion. Sauté for a minute, then add grated carrot, mashed peas, and corn. Stir well and cook for 2 minutes.
Now, add the mashed potatoes, turmeric powder , red chilli powder, cumin powder , coriander powder , Garam masala ,salt and cornflour . Mix everything well to form a smooth, flavorful mixture.
3. SHAPE THE CUTLETS

Once the mixture cools down, take small portions and shape them into round or oval cutlets.
In a separate bowl, mix all purpose flour with a little water to make a smooth paste. Dip each cutlet into this paste, then coat it with bread crumbs.
4. FRY UNTIL CRISPY

Heat oil in a pan for shallow frying. Place the cutlets and cook on medium flame until they turn golden brown and crispy on both sides. You can even deep fry or air fry whatever you prefer.
5. READY TO SERVE!
Remove the cutlets from the pan and place them on a tissue to absorb excess oil. Serve hot with green chutney or ketchup!
