INGREDIENTS:
- Pasta of your choice (penne)
- Olive oil
- Garlic
- Bell Peppers
- Tomatoes
- Cheese
- Olives/ Brocolli/ Mushroom/ Any choice of vegetables
- Seasonings: ~ Salt, Pepper,Oregano,Chilli flakes and Thyme.
METHOD:
1. Boil The Pasta

Take a saucepan add 3 litres of water, pinch of salt and let it boil. Afterwards add in 2 cups of pasta and let it cook for 7-8 minutes untill it’s al-dente. Later strain the water and your pasta is boiled.
2. PREPARE THE SAUCE

Take a baking tray of oven , put a baking paper , chop 4-5 bellpeppers , 3 tomatoes and 5 cloves of garlic put them on the baking paper drizzle some olive oil and sprinkle some salt and pepper ,mix it and bake in the preheated oven at 180 degrees for 20-25 minutes untill it gets perfectly baked .

After it’s baked separate them from the baking tray and add in the blender jar with a tablepsoon of olive oil and grind them well in mixer grinder into a smooth fine paste.
3. Saute The Veggies

Heat the pan , add some olive oil ,chop the vegatables of your choice i have used only mushroom ,add a pinch of salt and saute it in the pan untill it’s cooked. Mix it all stir it completely.
4. COMBINE THEM TOGETHER

In a heated large saucepan take 1 tablespoons of olive oil and add the prepaared sauce .Toss the drained pasta into the peperonata sauce, add the seaonings i.e. salt , black pepper , chilli flakes and oregano. Add bit of pasta water if needed for balancing consistency.
Serve with fresh basil and grated Parmesan on top. So it’s hazzle free and so easy to make ,quick pasta recipe. Try it out , I’m sure you will fall in love with it. Having this delicious pasta with Garlic bread is like cherry on top ! haha!
