Parma Rosa Pasta: where the heartiness of tomato meets the luxury of alfredo, making every bite a delight. Parma Rosa Pasta also known as Pink sauce pasta is the blend of alfredo and arrabiata also known as white sauce and red sauce.The mixture of this is called pink sauce pasta which is full delight of cheese and tangy tomato.
~ INGREDIENTS:
- Pasta of your choice (penne)
- Olive oil
- Garlic (6-7 cloves)
- All-purpose flour
- Milk
- Cream
- Cheese
- tomatoes (4-5 medium sized)
- onion ( 1 small)
- Basil
- Olives/ Bell peppers/ Mushroom/ Any choice of vegetables
- Seasonings: ~ Salt, Pepper,Oregano,Chilli flakes and Thyme
- Parmesan.
METHOD:
1. BOIL THE PASTA

Take a saucepan add 3litres of water, pinch of salt and let it boil. Afterwards add in 2 cups of pasta and let it cook for 7-8 minutes untill it’s al-dente. Later strain the water and your pasta is boiled.
2 . MAKE THE ALFREDO SAUCE

Take a saucepan, drizzle some olive oil then add the minced garlic. Afterwards add 2 tablespoons of all-purpose flour and let it cook. Then add 2 cups of milk slowly-slowly and whisk it continuously so there’s no lumps left. Add some cream and grate the cheese now. Lastly end it by adding the above-mentioned seasonings as per your taste.
3. MAKE THE ARRABIATA SAUCE

Take a saucepan, drizzle some olive oil then add the minced garlic. Afterwards add the chopped onions let them cook until transparent , later add the tomato puree (see below) ,seasonings like salt pepper chilli flakes oregano and some fresh basil leaves and let it cook for 10 mins until the water disappears.
Now your arrabbiata sauce is ready. To make the proper tomato puree we need to take 4-5 tomatoes , blanch them by adding it into the boiling water for 5 mintues until the skin is peeling from the tomato now add the blanched tomatoes into cold water . This step is crucial now grind them in mixer grinder and it\’s ready.
4 . SAUTE THE VEGETABLES

Chop your favourite vegetables i have taken bell peppers, cherry tomatoes, brocolli and saute them in the pan untill it\’s perfectly cooked.
5. COMBINE ALL OF THEM

Now its time for the last step . Add your boiled pasta in our prepared white sauce/ alfredo and red sauce/arrabiata. Add in the saute veggies heat up the flame and mix it well and let them cook together. Garnish it with basil leaves and mix again. You can end it with fresh parmesan cheese.
