Ingredients:
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 1 small onion, finely chopped
- 1 small carrot, finely chopped
- 4 tbsp fresh coriander leaves, chopped
- 1 tbsp cornflour
- 1 cube vegetable stock
- Salt to taste
- 1 tsp crushed black pepper
- 1 lemon (juiced)
- 1.5 litre water
METHOD:
1.Take a large pot , heat some olive oil. Add the minced garlic , onion and carrot and cook it well.
2. Take a small bowl add 1 tbsp cornflour and 2 tbsp water and mix it into a smooth slurry.
3. After the veggies are cooked add water and break the vegetable cube and keep stiring the soup.

4. Afterwards add the coriander and cornflour slurry to thicken the soup.
5. Sprinkle some black pepper and salt to taste, lemon juice and make sure the soup is boiling well so the flavours combine well.
6. After 10 mins of cooking , your soup is ready to be served.
Garnish it with some more coriander and spring onions. You can have some bread cubes/fried noodles with soup if you like!
