Cream Of Broccoli Almond Soup!

Rich and velvety blend of fresh broccoli, roasted almonds, milk, and fresh cream—perfect for a cozy, comforting meal. With a smooth texture and nutty flavor, this creamy soup is a delicious vegetarian recipe that’s great for dinner or as a starter.

~INGREDIENTS:

  1. Broccoli 300gms
  2. 3 cloves of garlic
  3. 1 small size of onion
  4. 1 small size of potato
  5. 1/3 cup almonds
  6. Butter
  7. 2 tablespoon of flour
  8. 2 cups of Milk
  9. Salt and black pepper
  10. Parsley for garnishing

~ METHOD:

1 . BOIL & GRIND THE VEGGIES

Heat a large pot. Pour 3 litres of water and add generous amount of salt and let it boil. Once the water has start boiling ,add in our 3 cloves of garlic, roughly chopped onion and potato.

Make sure you soak the peeled and chopped potato for 10 min in a bowl to remove the starch and later add in the chopped broccoli florets.

Let them boil completely for about 15 minutes later switch of the gas and strain them and let the boiled vegetable cool down. Afterwards take a blender jar add in the boiled vegetable and blend them into the smooth paste.

2. PREPARE THE BASE

Take a saucepan , Add 2 tablespoon of Butter and let it heat. Afterwards add 2 tablespoons of all-purpose flour and let it cook. Then add 2 cups of milk slowly-slowly and whisk it continuously so there’s no lumps left.

3. BLANCH THE ALMONDS

Take a large vessel , pour in 2 litres of water . Let it boil completely . Add 1/2 cup of almonds to the boiling water for 5-7 mins. When the skin is peeling off take out the almonds and add them in cold water . after 2-3 mins the blanching process will be completed.

Now remove the skin just peel them off and add in the blender jar with 1/4 cup of water and blend it well. You got your almond milk ready!

4. COMBINE THEM TOGETHER

In our prepared milk base add in the broccoli paste and and almond milk , add salt and black pepper to enhance the taste . Mix all them completely .

You can add some water to balance the consistency. Get 2 to 3 boils in the soup until perfection.

5. DELICIOUSLY DONE!

Soup is ready to eat. Serve hot and garnish it with some almond flakes and butter/ cream whatever your like. You can end it with fresh chopped parsley. You can even add some cheese in the soup if you like, it makes it more crreamy and cheesy!
