Ingredients:

  • 2 tbsp olive oil / butter
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 8 medium sized tomatoes
  • 1 tsp sugar
  • Vegetable stock/ water
  • Salt to taste
  • Black pepper
  • ½ cup fresh cream
  • ½ tsp dried oregano (optional)
  • ½ cup fresh basil leaves chopped

Method:

  1. Take a large pot , Boil 3 litres of water , add a pinch of salt and tomatoes. Let it boil completely.
  2. Once it’s boiled & cooled down , peel off the skin and blend it through a hand blender or in mixer grinder.
  3. Now heat a big saucepan , add oil/butter afterwards add onion & garlic ,let it cook until onion are transparent.
  4. Add the prepared tomato puree , 1 cup of water/ vegetable stock , basil leaves , salt to taste , sugar for balancing sourness, oregano , chilli flakes and pepper.
  5. Mix it well , add cream and cook tomato soup for 10 more minutes so the flavour combines well.
  6. Your soup is ready to serve , garnish it with basil leaves, cream and pepper.
  7. Have it with cheesy garlic bread or toast , tastes wonderful.
