Ingredients:

- 2 tbsp olive oil / butter
- 1 small onion chopped
- 3 cloves garlic minced
- 8 medium sized tomatoes
- 1 tsp sugar
- Vegetable stock/ water
- Salt to taste
- Black pepper
- ½ cup fresh cream
- ½ tsp dried oregano (optional)
- ½ cup fresh basil leaves chopped
Method:

- Take a large pot , Boil 3 litres of water , add a pinch of salt and tomatoes. Let it boil completely.
- Once it’s boiled & cooled down , peel off the skin and blend it through a hand blender or in mixer grinder.
- Now heat a big saucepan , add oil/butter afterwards add onion & garlic ,let it cook until onion are transparent.
- Add the prepared tomato puree , 1 cup of water/ vegetable stock , basil leaves , salt to taste , sugar for balancing sourness, oregano , chilli flakes and pepper.
- Mix it well , add cream and cook tomato soup for 10 more minutes so the flavour combines well.
- Your soup is ready to serve , garnish it with basil leaves, cream and pepper.
