Easy Aglio e Olio – Classic Italian Garlic Pasta

It’s a super simple but flavorful dish made with garlic (aglio), olive oil (olio), Chilli flakes, and parsley, often served with spaghetti.

~ INGREDIENTS:

  1. Spaghetti (200 grams)
  2. 4–5 garlic cloves thinly sliced
  3. Extra virgin olive oil
  4. Chilli flakes and Black pepper powder
  5. Salt
  6. Fresh parsley
  7. Grated Parmesan

~ METHOD:

1. Boil The Spaghetti

Take a saucepan add 3litres of water, pinch of salt and let it boil. Afterwards add in 200 grams of spaghetti and let it cook for 7-8 minutes untill it\’s al-dente. Later strain the water and your pasta is boiled. Keep 1 glass of reserved pasta water for later.

2. Toss The Pasta

In a large pan, heat 5 tablespoon of olive oil over low heat. Add sliced garlic and cook slowly until golden ,do not burn! Add red chilli flakes, black pepper and salt to taste. Stir for a few seconds. Add the drained spaghetti to the pan. Pour in some reserved pasta water (start with ¼ cup) to create a silky sauce. Toss well to coat the pasta evenly.

3. Final Touch

Once the spaghetti is cooked well and perfectly tossed to the flavour . Finish it of with some chopped fresh parsley and grated parmesan . Toss well again.

4. Aglio e olio is ready!
