Mexican rice is an easy way to indulge yourself in a delightful meal . With mexican touch and spices , a perfect flavourful dish to crave for! Below is the recipe , check it out and enjoy cooking.
Ingredients:
- 1 tbsp Oil
- 1 Small Onion
- finely chopped 2 tbsp Garlic
- finely chopped 1/2 Green Capsicum
- finely chopped 1/2 Red bell pepper
- Pulp of 3 Tomatoes
- 1/2 tsp Cumin seed powder
- 1 tbsp Taco seasoning mix
- 1 tsp Red Chilli powder
- 1 tsp Chilli Flakes
- 1 tsp Oregano
- Salt to taste
- 1 tbsp Tomato Ketchup
- 1 cup Basmati Rice (washed & soaked for 30 mins)
- 1/2 cup Kidney Beans (soaked 2hours & pressure cooked)
- 1/2 cup Corn,(boiled)
- 1/4 cup olives & Jalapeno
- chopped coriander
Method:
Heat oil in a pan, add onion, garlic and let the onion saute for 2 minutes. Add in red & green capsicum and saute it . Now add the tomato cook for 2-3 minutes with vegetables on medium flame.
Time to add the seasonings;- Add cumin seed powder, taco seasoning mix, red chilli powder, chilli flakes, oregano and tomato ketchup. Mix them well and add the rice, 1 cup of water, cover it and let it simmer for 5 minutes.

Give a check to rice , it\’s half cooked at this point ,Add kidney beans, boiled corn, jalapeno, coriander leaves, spring onion, give it a mix. Add salt, cover the lid and cook it till the rice is done.
Sprinkle some cheese, and give it a slight mix. Our Mexican rice is ready to serve. Serve it hot with nachos and grated cheese. Enjoy!
